It is produced on the plateaus of Quetzaltenango, at 2300 meters above sea level, by a combination of fine rum aged up to 25 years. The rum is left to age in oak barrels, previously used for Bourbon whisky, Sherry and Pedro Ximenez wines. The last phase of ageing, however, takes place in barrels of French cognac.
The palate is long, sweet and smooth. It has fruity (pear, cherry, plum and dried banana) and spicy (cloves, vanilla, cinnamon and liquorice) aromas. On the finish, it presents sensations of dark chocolate and leather.
