This cider is an exceptional product compared to the region it comes from, since 100% of the 18 hectares of orchard is made up of tall trees. 
 
The planting density is rather low if compared with that of the current industrial orchards (low-trunk trees). There is no need to use treatments or chemicals and the ripeness and quality of the apples are naturally excellent. 
 
The apple harvest takes place between October and November, at the time of natural ripening of the fruits: these, after a careful selection, are chopped and pressed. The fermentation of the juice takes place in the cellar at a temperature of 10 ?X, until the alcohol content of 5 ?X is reached.
